Mini Madeleine

Hello Dear Readers!

Did you have a nice weekend?  I slept through most of mine!  I am feeling slightly better and I am so glad I had the weekend to rest.  I didn't get much done but I did get up long enough to make some mini madeleine cookies.

Look how small they are!

I used a regular white cake mix and substituted the butter with organic coconut oil. I think it is healthier and it makes the cookies taste much better!

Mae Mulberry! You copy cat!

You can see Mae at work in my next episode of Life in the Calico Valley :

I would like to wish you all a Merry Christmas!  xoxoxo

  5. I Love Madeleines!! I made some sugarless treats today using coconut oil too. Apparently it is very healthy indeed. Does that mean you can eat more madeleines? :-) Mae's look good too but they are too small. Your size is better :-)

    1. I used a mini madeleines mold! Very easy to make but it takes a long time if you use a whole cake mix.
