Mini Madeleine

Hello Dear Readers!

Did you have a nice weekend?  I slept through most of mine!  I am feeling slightly better and I am so glad I had the weekend to rest.  I didn't get much done but I did get up long enough to make some mini madeleine cookies.

Look how small they are!


I used a regular white cake mix and substituted the butter with organic coconut oil. I think it is healthier and it makes the cookies taste much better!

  4. I Love Madeleines!! I made some sugarless treats today using coconut oil too. Apparently it is very healthy indeed. Does that mean you can eat more madeleines? :-) Mae's look good too but they are too small. Your size is better :-)

    1. I used a mini madeleines mold! Very easy to make but it takes a long time if you use a whole cake mix.
